Ingredients:
- ¼ cup brown sugar
- ¼ cup canola oil
- ½ teaspoon vanilla
- ¼ cup molasses
- ¼ cup applesauce
- 1 ¼ cup all-purpose flour
- 1 teaspoon ginger
- 1 ½ teaspoon ground cinnamon
- ¾ teaspoon baking powder
- ¼ teaspoon salt
- ½ cup hot water
Directions:
- Preheat oven to 350.
- Grease an 8×8 baking pan or a cupcake tin.
- Combine sugar, oil, vanilla, molasses and applesauce in a large bowl.
- In a smaller bowl, mix flour, salt, baking powder and spices.
- Add the flour mixture into the wet ingredients bowl and then add the hot water
- Pour batter into the pan and bake for 20-25 minutes for cake or 15-18 minutes for cupcakes.
