Ingredients: (makes 12 muffins)
- 2 cups all-purpose flour
- 2/3 cup vegetable oil
- ½ cup applesauce
- 2/3 cup sugar
- ½ cup brown sugar
- 1 teaspoon vanilla extract
- ½ teaspoon baking soda
- ½ teaspoon baking powder
- ½ teaspoon salt
- 2 teaspoons ground cinnamon
- 1½ cups shredded zucchini
- ¾ cup shredded carrot
Instructions:
- Preheat the oven to 375.
- In a mixing bowl, mix the oil with applesauce, sugars and vanilla.
- Combine the flour, baking soda, baking powder, salt and cinnamon.
- Combine the wet and dry ingredients, stirring until blended.
- Fold in the shredded zucchini and carrots.
- Put muffin liners in each muffin tin. Fill muffin cups about ¾ Sprinkle with cinnamon sugar or granulated sugar, if desired. Bake 15-20 minutes.
